  2. Preheat oven to 350 F. Grease a muffin pan or spray paper liners to prevent sticking and set aside. In a
  3. medium bowl, mix flour, baking powder, soda, sugar, salt & cinnamon in a medium bowl. In a large bowl,
  4. mix applesauce, vanilla and carrots. Add dry mix to wet mix in 3-4 batches. Stir until just combined. Fill
  5. cups to the top bake 15-25 minutes or until a toothpick inserted in the center comes out clean.
  6. We ice these with cashew coconut almond cream frosting-yum!




Recipe Notes

Notes: We always omit salt, sometimes add raisins or nuts, and we double muffin or cookie recipes to freeze. We use Cashew Coconut Almond Cream Frosting when we want to make them extra special, but they are wonderful by themselves!
