Hi friends!

I’m Sherri, and I’d like to be the first to welcome you to Soon2bhealthy—a labor of love born out of our own desperation to find answers to our failing health and weight issues.  If like us, you are disillusioned with fad diets, medical interventions, and prescription meds with their awful side-effects, you have come to the right place!

In 2010 I spent hundreds of hours and a great deal of money searching for a solution to my severe memory loss, insomnia, thyroid issues, and depression (certain I was on the road to dementia in my fifties). I became fascinated with Nutritional Science and the documented stories I read of restored health achieved simply by changing to a plant-based diet. For the first time, I became hopeful that perhaps my fate was not set in stone, and I could be free of the awful addictive medications. My husband also suffered from serious medical issues. Within 6 months of adopting this new way of eating, I was down 35 pounds, my husband had lost 50, and most of our health issues resolved!

In 2015, our friend Tammy embraced a whole-food, plant-based diet with us, and lost 46 pounds, going from a size 14 to a size 4! But weight loss was just the “icing” on her vegan cake–the greatest benefit was getting a new lease on life with restored health. You see Tammy was certain she was predestined for the same fate as her family. Diabetes, high blood pressure, strokes, and heart disease were rampant in her family-and her brother and both her parents had suffered with them beginning in their fifties, the same age she was then. She already had a heart condition, and her doctor wanted to up her blood pressure meds. The epiphany came when she heard this quote from renowned Cleveland Clinic heart surgeon Dr. Caldwell Esselstyn, Jr.– “Genetics loads the gun, but lifestyle pulls the trigger.” Tammy took control of her health destiny, and reversed her high blood pressure, pre-diabetes, and a heart condition!

This inspired us even more, and both Tammy and I decided to complete the e-Cornell Plant-Based Certificate program from the Center for Nutritional Studies, and the Forks over Knives Plant-based Cooking Course. Just as we prepared to launch “Soon2bhealthy”, our local newspaper decided to run our story on New Year’s Day, 2017. What began as a vision of a handful of people sitting around my living room, quickly evolved into a rented class room when 50 people signed up for our classes. We soon discovered there were many, like us, seeking natural, lasting solutions to their weight and health issues. We now offer 1-1 coaching, group/organization training, seminars, grocery store tours, in-home classes, and cooking demos. We quickly realized we can only reach so many in person with our limited time and resources, so decided we better get “tech savvy” so we can reach the masses with this message of hope and healing that can be achieved by anyone willing to put forth the effort.

Eight years ago, I would not have believed I would ever again be a productive member of society, much less be creating curriculum and web content, teaching classes, or writing this blog, for that matter! At nearly 64 years young, I feel better than I did in my fifties-and have endless energy! The greatest gift of all is being fully engaged with my kids and grandkids, and now working on my “bucket list” with my sweetheart of fifty years. Last year I got to cross off a big one-conquering Camelback Mountain in Arizona, a feat that took me 3 attempts to complete, and one I could never have accomplished ten years ago!

Our goal with Soon2bhealthy is to provide you with a virtual “roadmap” for success-sharing the resources & tips that have helped us maintain our health and weight loss for eight years now. We will provide the education, motivation, and inspiration you need to take responsibility for your health, and we’ll offer solutions to help overcome the obstacles that you may encounter on your journey. We will feature amazing recipes, cooking videos, and success stories, and provide links to the best plant-based medical and educational websites to answer your questions. Like a former student stated: “I can no longer stick my fingers in my ears and pretend to unhear what I know to be true-I have to do better for the health of my family!”

Our motto is: “Nothing tastes as good as healthy feels,” but be sure and check out our recipes and the links provided under the education and motivation tabs.  We think you will be as pleasantly surprised as we were! We are not the least deprived.

Dr. Fuhrman says: “If you continue to eat the SAD American diet, it is not a question of “if” you will have high blood pressure, diabetes or heart disease, it is only a question of “when.”
