Soon2bhealthy has been my mantra since embarking on a quest to restore our health and vitality over the past six years. I have attended three, week-long Dr. Fuhrman Health Getaways in San Diego, Utah and Newport Beach, and had the privilege of meeting hundreds of people who have arrested or reversed disease by adopting a Nutritarian or Plant-based diet. I was fascinated with Nutritional Science and the body’s ability to heal itself, and became hopeful that we could regain our failing health and reduce the need for medications by changing the way we ate.
Life as a Nutritarian
A Nutritarian/Plant-based diet focuses on nutrient-dense plant foods—fruits, vegetables, beans, nuts, seeds and legumes. Meat and dairy (if consumed at all) is kept to less than 10% of dietary intake, and toxic foods such as salt, sugar, sweeteners, white flour, processed, and greasy fried foods are limited. It differs from a vegan diet in that many vegan foods are still highly processed and contain many of the discouraged ingredients like salt, sugar and oil. And true vegans consume no animal products of any kind, often for ethical reasons. While Dr. Fuhrman discourages any animal product consumption, he realizes many people find zero tolerance too restrictive, and from a purely scientific perspective, indicates that keeping consumption to under 5-10% of total dietary intake can still produce dramatic health benefits.
Have I lost you yet? My first reaction was: “What’s left?” I didn’t even like to cook, so it was all so overwhelming. Then I heard Dr. Fuhrman say: “If you continue to eat the SAD (Standard American Diet), it is not a question of ‘if’ you will have high blood pressure, hypertension and heart disease; it is only a question of when.”
Since then I have spent countless hours reading labels, shopping and preparing Nutritarian/Plant-based dishes. I am happy to report that (after a short detox period) we fell in love with this way of eating! We quickly realized the pay-off far outweighed any “sacrifice” we felt we were making. My husband previously suffered from horrific intestinal problems (requiring surgery), elevated blood pressure, fatigue and high cholesterol. Within months he was down 45 pounds, off cholesterol meds, and intestinal problems gone. I lost 35 pounds, have tons of energy, and am loving life again! My cholesterol is excellent. I no longer suffer from acid reflux, constipation, joint pain, fatigue, depression, and my severe memory and insomnia problems have significantly improved. I no longer rely on antacids, pain relievers or sleeping pills. I walk, work out, swim and play tennis with my grandkids—little of which I did before. We have also reduced our risk factors for diseases like diabetes, heart disease, auto-immune conditions and cancer.

We have both completed our certification in plant-based nutrition through E-Cornell University as well as a 3 month online Forks over Knives culinary course this past year. We’ve learned even more tips and tricks for infusing great flavor into delicious plant-based recipes that have successfully won over many of our skeptical friends and family to this way of eating. We are excited to see our children and grandchildren embracing healthier options and we’re encouraged to see their health issues improving as well.
The goal of our website is to gather into one place the resources and tools I have acquired over the past six years, and provide education, motivation, and inspiration to others through classes, coaching, and a private facebook support group. There are now numerous effective plant-based programs, websites with easy, delicious recipes, and educational sites with science-based research on preventing, arresting and even curing serious illnesses and disease with proper nutrition. We want our class attendees to leave not only motivated, but with a “roadmap” to success that will help them accomplish their goals without having to spend a fraction of the time and money we did to get here. We also want to keep it real—we are average, busy women with very basic cooking skills, and we want people to be encouraged that if we can do this with some degree of success, then they can too.
Most of all, we want people to understand they have options to help prevent and reverse disease, get off dangerous medications, and live life vibrantly into the “golden” years. We never want to helplessly watch another friend or family member suffer or die from a potentially preventable disease or the debilitating side-effects of medications and treatment that might have been avoided. We know now that “Genetics may load the gun, but lifestyle is what pulls the trigger” (Dr. Esselstyn). We don’t have to be victims of our family health history. We are not powerless!
We realize that this way of eating will not appeal to everyone; the thought of such drastic change for many will seem too “extreme”. I was certainly one of those until I heard this quote from renowned Cleveland Clinic Heart Surgeon and author of “How to Prevent and Reverse Heart Disease.
Dr. Esselstyn says:
“Some people think a plant-based, whole foods diet is extreme. Half a million people a year will have their chests opened up and a vein taken from their leg and sewn onto their coronary artery. Some people would call that extreme!”
That got our attention, and we decided that:
“Nothing tastes as good as healthy feels!"
